Date and Carob Balls

Talk about balls of deliciousness! These carob date balls are tasty and nutritious. Dates and raisins contain a healthy dose of protein and fiber and are a healthy source of B vitamins. They also contain iron, calcium and potassium. Sunflower seeds are a rich source of vitamin B1, copper and vitamin E and carob is a good source of selenium and calcium.

Date and Carob Balls

2 cups pitted dates
1 cup raisins or sultanas
½ cup sunflower seeds
¼ tsp peppermint essence
½ cup carob powder
Coconut for coating

Blend the first three ingredients in a food processor. Combine fruit mix in a mixing bowl with the peppermint and carob. Mix thoroughly. Roll into balls and roll in coconut.
